Grape Varieties:
Crafted from early morning-harvested grapes in the Polkadraai Hills area in
Stellenbosch, this 70% Chenin Blanc and 30% Sauvignon Blanc blend captures
the freshness and vibrancy of this region’s unique terroir. The vineyards sit
predominantly on Cape sandstone soil, which emphasizes the characteristics of
both these varieties.

In the Cellar:
Each variety is vinified separately at relatively cool fermentation temperatures
to preserve aromatic intensity and varietal expression. A month’s maturation
on primary lees post fermentation adds depth, enhancing mid-palate texture
while retaining crisp acidity.

Tasting Notes:
The nose is immediately inviting with aromas of green apple, guava and
passion fruit and subtle hints of ripe pear. On the palate, this wine is bright
and energetic with the stone fruit richness of the Chenin Blanc and the zesty
citrus of the Sauvignon Blanc. The lees aging brings a round mouthfeel and
adds finesse to this wine. Best enjoyed chilled on its own or paired with sushi,
Al fresco lunches and grilled chicken or fresh green salads with citrus
vinaigrette.
